Brass Mailbox Numbers

 
 
These mailbox numbers are far better than you would think. One would probably say, they are just mailbox numbers but these on the other hand are really lovely! They are a nice strong polished brass so they look really professional. The back of the numbers have an adhesive sticky on them that is very easily removed and easy to place on the box itself. They stand out nicely on the box and hold up well against snow, wind and rain.. all something that has occurred this past week! I also like the fact they come in packs of 2 so you can have one for each side of the box.
 
I highly recommend these numbers for anyone who needs new ones for their mailbox.

 First off, don't mind the mess in these pictures. We are in the middle of moving into our new house and we have been packing and packing, packing, and packing some more... That said, given another chance to review this product, I jumped on it. I love the products by Ozeri because they are not only economical but high quality too. The last fan I received (you can read HERE) was absolutely amazing and with our weird weather, we have had to use the fan and this new heater this week alone. The heater has 2 zones for warmth that can be used for both on high, low or one on and one off. It's size makes it great to have in the living room or bedroom. The other great thing about this is that it is visually pleasing. It isn't big and bulky yet packs a punch like a heater 10x its size. the base is extremely sturdy, even on carpet. It heats up to 95 degrees which an be controlled with the help of the remote. Another great thing considering if you get too hot but are comfy while watching a movie on the couch you can adjust it without even getting up. Overall, this is a great little heater that is comparable to top dollar products similar. It is also SUPER easy to set up right out of the box. I highly recommend it for anyone looking for a cozy heater!

Bighorn Sheep Meat Pie

Every Sunday, I typically put together our meal plans for the week. I get tired of doing the same things for dinner so my meals are always interesting for the most part. Last week for example was creamy chicken, mushroom & asparagus casserole (can we say YUM!) as well as elk casserole (delicious after I added my touches to it) and a nice chicken breast marinated in a sweet & spicy Asian balsamic vinegar. I don't want to brag or anything, but I'm a pretty good cook. (Photo Credit: Myself! Took this photo in Badlands National Park in South Dakota a couple Christmas' ago.)

So we're going through the freezer and I decided it was finally time to put the ground bighorn sheep to use. We are very much into wild game, typically having elk, bison, and various other meats on hand at any point in time. I wasn't sure what to do with the bighorn sheep until now but after finding this recipe, I knew it would be tasty! I will say that I did add a few changes to this recipe so it isn't the same exact recipe, but I wanted to give due credit where it belongs. I didn't think about taking photos until halfway done with the recipe because I wasn't sure how it was going to turn out. Originally, this was just going to be an Instagram post showing how delicious vegetables are but then it tasted so good I had to share the recipe. To begin with, brown your ground bighorn sheep until done. It didn't take long to cook and there was essentially no clean up involved because it is a very lean/non-greasy meat. While that was cooking, I started chopping up my vegetables. We get a box full of fruits and veggies almost every week and due to a mess-up in the box, I was left with cucumber instead of zucchini. Have no fear, squash was included in the box and since they are in the same family, I went ahead and tried it out. At the very least it would have been Taco Monday instead of meat pie. Thankfully, the squash was delicious and no taco run was needed.
 
 
Back to the vegetables! I put in the squash, carrots, and onion but felt like it needed more. In came some mushrooms and of course *light bulb* green chilies! Living in the land of green chilies, it is impossible to cook something without wanting to throw some of those bad boys in there. I cleaned off a couple and threw them in the pan diced in nice sized chunks. Now we're talking!  Unfortunately, after that I didn't have any more photos to take until the finished product but don't let that deter you! You can see the process on the blog linked above if you want to see what it looks like during the cooking process.
 
After you cook the vegetables, you mix them together with the ground beef and cheese. I threw it all back into the skillet since I had more veggies than meat and one less clean up. I let that sit for a couple minutes while I started rolling out the puffed pastries. I have a more oval shaped baking dish so it was more work for me but if you have a round or square dish you'll have no issues getting the right shape. Lay one layer of puff pastry down inside the pan and you are ready to go. I got dirty for this part as I wanted to evenly spread the meat so I used my hands to add it to the dish, ground bighorn sheep and all! I then added more cheese to the top of it and spread the mashed potatoes over that. I did only use one potato because it is just my husband and I, knowing we would have plenty extra for lunches this week in the meantime. That said, if you need more mashed potatoes or have a bigger dish than mine, make more. All that's left is to add the top layer of puff pastry, cover it in an egg wash and sprinkle with salt and pepper! Place it in the over for about 45 minutes and get ready for deliciousness!
 
I didn't have to cover mine with foil as I checked it after 20 minutes and again after 15 minutes. After that, I turned off the heat and let it sit in there for about 10 more minutes since I was in the middle of making breakfasts for us for the week. I am badass when it comes to multi-tasking, except for when a big grease splatter came up and hit me in the chest. Ouch...
 
 
After all is said and done, this is a pretty incredible dish and worth the almost $5 it cost for 2 puff pastries. Our store didn't have a generic brand and I needed them no matter what so what the heck. I'm not sure many people have ground bighorn sheep lying around. We only have it because of our good friends giving it to us on our last visit out there as he is an avid hunter. Hopefully one season soon my husband can join along side with him. I hear turkey season is coming up and he wants to go out so we might just have some turkey recipes coming to the blog in the future. In the meantime, we get to enjoy these leftovers because they are THAT good! If you find you can get your hands on some bighorn sheep, this is the recipe to try. If not, pass this along to those you know who hunt.
 

 Bighorn Sheep Meat Pie
Ingredients
  • 1 1/2 pounds ground sheep
  • 1 medium yellow onion, chopped
  • 2 cups squash, chopped
  • 1 cup mushrooms, chopped
  • 1 cup green chilies, chopped
  • 2 tablespoons butter
  • 1 large potato, chopped
  • 3/4 cup sour cream
  • 2 cups shredded cheese
  • salt & pepper
  • 2 puffed pastries (defrosted)
  • 1 egg yolk beaten with 1 tablespoon water
  • 2 teaspoons season salt
 
Directions
  1. Boil potatoes until soft about 15 minutes. When ready, mash with your favorite mashed potato recipe. (I prefer a simple butter, sour cream and cream cheese mixture blended into the potatoes with the hand mixer)
  2. Preheat oven to 375 degrees.
  3. Heat a large skillet over medium heat and brown ground sheep until cooked. Season with season salt. Remove and set aside in a large bowl.
  4. Add butter to skillet and cook onions, squash, carrots, mushrooms, and green chilies until onions are soft and transparent. Season with salt and pepper. Remove vegetables and add to the cooked meat. Stir in shredded cheese.
  5. On a floured surface, roll out the pastry sheets to be larger than the size of your baking dish. Place one pastry sheet in the bottom of the baking dish. Transfer meat and vegetables into the dish and top with the mashed parsnips and potatoes. Brush the outer edge of the bottom pastry sheet with egg wash. Place the second pastry sheet on the top and press the edges of the pastry sheets together. Brush top of the pastry sheet with remaining egg wash and season with salt and pepper. Cut an ‘X’ into the top of the pastry to allow for the steam to be released.
  6. Bake for approximately 45 minutes or until crust is browned.

My best friends son is only in early high school but has already been accepted into an internship program at their local hospitals emergency room. He is an incredibly smart and talented kid who already knows that he wants to go into some form of medicine when he graduates. Backstreet Boys Larger Than Life Residency


      
 
Months ago, my husband did something totally amazing and probably what will go down in history as one of the best nights of my life; he bought us tickets to go see Backstreet Boys in Las Vegas. Being born on the brink of the 90s, it's no surprise that I was one of those teeny boppers that had an obsession with Backstreet Boys, or BSB as those of us still know them as. So you can imagine the freak out I had when I found out we were seeing them in concert. Not only were we seeing them in concert, but we were seeing them on our anniversary which just so happens to be opening night. Did you hear me?  WE WERE GOING TO SEE BACKSTREET BOYS ON OPENING NIGHT!! I mean, what more could a girl who grew up in the 90's ask for?
 
 
The time had finally arrived and we were hitting the road for Las Vegas. It wasn't our first rodeo. We got married in Vegas and had been many other times just for trips or stops along the way for our road trips. But this time around we planned for a longer stay as we were there for almost a week. We hooked up the travel trailer and made the 12 hour drive 15 hour drive. Thanks to the Good Sam membership we got with the trailer, we found a pretty awesome RV resort just off the strip for way cheaper than one night at a hotel. The best thing about this hotel... an adults only pool AND hot tub. If you know me, you know how big of a deal this is. But i'll go into that more on another post. Regardless, the time had arrived and we headed to Planet Hollywood where the Axis Theatre is located. Skip ahead and there was the massively long line to enter the theatre followed by the short line for us to get to our seats. We didn't want pit tickets because previous experiences from other concerts we have been to meant we want to see the entire show and enjoy it. Our tickets were central to the stage and just a handful of rows from the main catwalk. It was awesome!

 
Since it was opening night, nobody was sure on what was going to happen and how they were going to come out. It was all a big surprise but oh was it worth it. They played a bunch of 90's music while we waited and then a screen started playing with this really cool remix of all the popular BSB songs (you can find my video of it HERE) That went on for a good 10 minutes or so before the lights went out and the curtains went down! I don't know how to explain the shear excitement that went through me right then and there but I was a kid in a candy store with a theatre full of others feeling the same way. They opened with Larger than Life which makes sense due to it being the name of the "tour".

    

They played through song after song with some skits in between. Of course, they are older now then they were when I was younger so the moves have slowed down a bit but they still did a hell of a job in keeping the crowd entertained. AJ was on top of it with a big welcome to Vegas and the opening night of the residency speech. The guys all joined in with their own input making everyone laugh before they moved into other songs like The Call, Drowning, and Show Me The Meaning of Being Lonely, just to name a few. They all made fun of themselves a little bit with their age. But as far as the dancing goes, Kevin has not lost his moves. There was one point in the show where they ballroom/swing dance and he was really the best one out of the group. So age hasn't slowed them down too much. Brian talked about how soon they would be singing "Oh My God, they're still here"... or "Backstreet Men". They made it entertaining that's for sure. It was pretty amazing being at opening night though because not only did we get to say it was the first show, but we were the first ones to see it and hear what they were saying. And they can't say opening night at any of the other shows!

 
I think the entire crowd stood up for the full show. Not a single seat was sitting except for the occasional husband or boyfriend who bought tickets just to make their spouses happy. My husband on the other hand was standing up with me. He may not have been singing along but he did say it was entertaining. I'll take it since that is coming out of the mouth of a 40 year old who makes fun of me for getting excited just hearing BSB on the radio. They had a few wardrobe changes in the show which is expected. While they changed (rather quickly) they had their backup dancers putting on a nice little routine in between. Chicks in provocative clothing and guys dancing around them. It is Vegas so it was expected as well.  

    
 
    

 Halfway during the show, in one of the wardrobe changes, we went photo crazy. Ok, I went photo crazy. But I was having the time of my life and I was going to enjoy every second of it. The only thing I found a little distracting was the girls who were there who didn't know any of the words to their songs. I think daddy paid for their tickets to go out or something. It didn't seem like they were actually fans? But the other thing about that was there were so many people who DID! I was actually amazed at the variety of people attending the show. From the teeny-boppers who are now grown up (so other late 20 year olds like me) to 30 somethings at their bachelorette party. And let's not forget the OLD guy who brought an 18 year old escort to the show. Totally not joking about that one.

         

 The other really cool thing was that at one point, they disappeared and ended up coming into the crowd. Nick was on the left of us and Kevin was just about in front of us. All the lighting made taking photos a little difficult since the spotlight was on him but you can tell that he was close to us. They stayed there for the entire song singing and dancing like it was the 1990's all over again. I know a couple years back Brian had talked about how he had vocal problems but you couldn't tell at all from the high notes he was hitting. You can tell it was coming straight from the heart still. And he was always my favorite growing up, so I'm not bias AT all!

    

    
 
After 18 songs (21 if you can the 3 songs that were combined into a medley) it was time to call it a night. They finished the song and then the lights went out. Of course, we all knew they were not leaving without singing "Everybody" because why not have the excuse to say "Oh My God We're Back Again" one more time. The music queued back up again and sure enough, there they were. They finished up the song, said some thank yous and shot out confetti. I was hoping for another 3 hours but unfortunately the set was over and it was time to go.  I seriously had the best time and can't even really put into words how much fun it was.
 
 
 
Although this was a lot of words and was very photo heavy, so apparently I can do something with it. But if you had any liking of the Backstreet Boys, I highly recommend going to the show if you get a chance. The only thing I regret is not going to the after party. The only reason we didn't get to was because of a) they said there wasn't going to be one for opening night and then b) they decided to have one and sell tickets 2 days before the show which is when we were driving to Vegas. Had they not announced it so quickly, we would have totally gone because the videos from the after party looked so fun! Maybe I can convince hubby to take another trip to Vegas this summer for a second show? Wink wink? I wish, but we have too much going on this summer for that!
